How do I make my name on the right smaller, or just gone all together? It bothers me for it to cover up the notes.

Also, if possible, how do I get rid of the "Stage" thing near the bottom?

The scoreboard is in the network options. Just turn it off in options/settings.
As for that... Uhh... I'd have to check the theme/metrics... Give me a bit...
Edit: It's in ScreenGameplay in default metrics. Look for "SongMeterDisplay"
